Simone's Quick & Easy Protein Pancakes!
When I was a kid there was a period of time where, every Saturday my Dad would get up and make pancakes for breakfast. For some reason, I was allowed to drench my fluffy cakes in Aunt Jemima syrup, and it was amazing! Of course, looking back, the whole experience was about more than just the food. It was about me and my Dad, it was about having a regular ritual, it was about a lot of things! But even now, pancakes just make me feel warm and fuzzy inside. But, as most of you know, I’m not so much into the sweet stuff any more! I’m all about keeping my blood sugar stable, eating healthy carbs, and making sure my macros are balanced!! And pancake mix topped with table syrup is none of those things!!!
So, how do I get my warm pancake fuzzies these days? Well I’ve got a wonderful, protein rich, delicious recipe for you right here!! And it is so, so simple! Protein Pancakes people!!!
Ingredients
2 Bananas
2 Eggs
½ Cup unsweetened almond milk
1 tsp Vanilla extract
2 tsp baking powder
1 ½ cups Gluten Free/Organic Oats
½ tsp cinnamon
¼ - ½ tsp salt
½ scoop Bioedge Vegan Protein Powder
Add all the ingredients in either a food processor or a blender.
Blend until smooth (~45 seconds).
Heat a cast iron skillet, griddle or frying pan over medium heat and coat with either an Avocado Oil or Coconut Oil spray.
Pour some batter into the skillet. Wait until air bubbles start to form on the edges of the protein pancake, about 2-3 minutes, then flip sides and cook til golden brown, about another 2 minutes or so.
Be sure to watch the heat of the pan and adjust accordingly.
Top with Greek yogurt, fresh or frozen berries, or nuts and seeds!
And that’s it! Yummy, delicious, and QUICK protein pancakes for you and the family! And, even though I don’t recommend it, if you wanna get a little crazy and drizzle some maple syrup on top, it’ll taste great too!
